  • 2 tsp instant coffee granules
  • 1/4 cup cocoa powder (plus extra for dusting)
  • 1/2 cup mascarpone cheese
  • 1 tsp vanilla extract
  • 1/4 cup espresso or brewed coffee (for syrup)
  • 2 tbsp sugar (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, instant coffee granules, cocoa powder, and a pinch of salt; set aside.
  3. In another bowl, cream together room temperature butter and sugar until fluffy. Add egg and vanilla extract; mix well.
  4. Gradually combine the dry ingredients with the wet mixture until just blended—avoid overmixing.
  5. Drop cookie dough onto prepared baking sheets, leaving space between each.
  6. Bake for 10-12 minutes until edges are golden and centers are soft. Cool completely on racks.
  7. For the syrup, heat espresso with sugar until dissolved; cool slightly.
  8. Assemble cookies by spreading mascarpone on half of each cookie, drizzling with syrup, and topping with another cookie half.
