  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup corn
  • 2 finely chopped spring onions
  • 14 ounces firm tofu
  • ⅓ cup tahini
  • 2 tablespoons lemon juice
  • 4 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ tablespoons extra virgin olive oil
  • ⅓ cup water
  • 1 clove garlic
  • ¼ teaspoon salt

Instructions

  1. Drain and press the tofu to remove moisture. Cut into cubes and toss with cornstarch, garlic powder, paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook the tofu for about 10-12 minutes until crispy.
  3. In a mixing bowl, combine lettuce, cucumber, tomatoes, corn, spring onions, and diced avocado.
  4. In another bowl, whisk tahini with water, lemon juice, minced garlic, and salt until smooth.
  5. Add cooked tofu to the salad mixture and drizzle with dressing. Toss gently and serve immediately.
