  • 16 oz box Rotini pasta (about 8 cups cooked)
  • 1/23/4 cup Italian Dressing
  • 1/2 cup roasted red peppers (diced)
  • 1/2 yellow onion (diced)
  • 2 oz can black olives (sliced)
  • 1/2 large cucumber (peeled and diced)
  • 12 slices chopped chicken breast
  • 10 chopped cheddar cheese sticks
  • 1 cup sliced turkey sausage sticks
  • 1/4 cup grated Parmesan cheese
  • Small pie pumpkin (for serving)

Instructions

  1. Boil water in a large pot. Add the rotini pasta and cook according to package directions until al dente. Drain the pasta using a colander.
  2. In a large mixing bowl, combine the cooked pasta with diced vegetables, chopped chicken, turkey sausage sticks, and cheese sticks.
  3. Pour in 1/2 cup of Italian dressing and toss everything together until well coated. Adjust seasoning as needed.
