  • 2 sticks (226 g) unsalted butter, room temperature
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla extract
  • 1 cup milk, room temperature
  • 1/2 cup sour cream, room temperature
  • 1 cup butter (227 g), room temperature
  • 1/2 cup shortening (Crisco) (100 g)
  • 6 cups sifted powdered sugar (750 g)
  • 1/4 cup milk
  • 1 tablespoon vanilla

Instructions

  1. Preheat oven to 350°F (177°C). Butter and flour three 6-inch round cake pans and line with parchment paper.
  2. In a bowl, whisk together cake flour, salt, baking powder, and baking soda; set aside.
  3. Mix milk, sour cream, and vanilla in another bowl; set aside.
  4. In a stand mixer, beat butter and sugar until creamy. Gradually add egg whites until fully incorporated.
  5. Alternate adding dry ingredients and wet mixture into the mixer at low speed until just combined.
  6. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool in pans for 15-20 minutes before transferring to a wire rack.
