  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, heat oil over medium heat. Sauté diced onion for about 3 minutes until softened, then add minced garlic, celery, carrots, potatoes, and spices. Cook for another minute to blend flavors.
  2. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes until vegetables are tender.
  3. Blend half of the soup using an immersion blender until smooth. Return blended portion to the pot, stir in dairy-free cream, and adjust seasonings.
  4. Serve warm garnished with fresh parsley and optional vegan sausage slices.
