  • 1 1/2 cups all-purpose plain flour
  • 3/4 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup dairy-free yogurt (or unsweetened applesauce)
  • 1/3 cup dairy-free milk
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Strawberry Filling: In a mixing bowl, combine chopped strawberries with granulated sugar, lemon juice, and flour. Set aside.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.
  4. Add Wet Ingredients: In another bowl, mix melted vegan butter, dairy-free yogurt, dairy-free milk, oil, apple cider vinegar (if using), and vanilla extract until smooth. Pour this into the dry ingredients and stir until just combined.
  5. Assemble the Cake: Pour half the batter into the prepared pan. Spread the strawberry mixture on top followed by the remaining batter.
