  • 2 medium zucchinis
  • 1 bell pepper (any color)

Instructions

  1. Wash and chop the zucchinis into half-moons. Dice the bell pepper and onion.

  3. Add ground beef to the skillet and cook until browned, about 5–7 minutes.
  4. Stir in the diced bell pepper and zucchini, cooking for an additional 5–6 minutes until the zucchini is tender yet crisp.
  5. Season with salt, pepper, and any preferred spices before serving warm over rice or with crusty bread.
